Italian style bean and tuna salad

Ingredients
- 1 x 185g can Safcol Tuna in oil Italian style, drained
- 1 small red onion peeled and thinly sliced
- 400g can cannellini beans drained and rinsed
- 200g green beans, topped and tailed
- 8 mini roma tomatoes, halved
- half a cup flat-leaf parsley, roughly chopped
for the dressing
- 3 tablespoons extra virgin olive oil
- juice and zest of ½ lemon
- 1 garlic clove crushed
- 1 teaspoon Dijon mustard
- sea salt and pepper to taste
Instructions
- Drop the prepared beans into a little boiling salted water and cook until tender yet crisp. Drain immediately. Refresh under cold water and drain again.
- In a large salad bowl add the tuna and gently flake it then add all the other salad ingredients.
- Mix very gently so as not the breakup the tuna and then transfer to a serving plate or bowl.
- In a small bowl whisk the olive oil, garlic, lemon juice, zest and mustard together, then season to taste.
- Drizzle the dressing over the salad and scatter the parsley over. Serve straight away with crusty Italian bread and a light red wine.
